I do feel sorry for Jan,seems a fairly honest fella,he was hardly going to turn down the offer to manage Saints.limited funds, limited ability,under the ever watchful eye of lowe, if not taking direct orders reference team selection and the aquiring of new playing staff. Always put chocolate in a Chilli con Carne.. Gaspacho soup.Ideal for the forthcoming summer...hopefully... Plunge some Tomatoes in boiling water,leave for 15 seconds maximum,place in iced water to refresh. Skin and de-seed them,place to one side. Peel and de-seed a cucumber,then chop. Plunge red peppers into boiling water or singe the skin under a grill,skin and de-seed and chop. Place all into a blender add sherry vinegar and some white wine vinegar salt and pepper to taste. Place the liquid into a deep tray,place slices of bread into the tray also,chill over night. Next day blend all together once more,the bread acts as the thickening agent. Season again to taste. Im afraid i cant remember the quantities of each item as i made it to order,but thats half the fun,experimenting. We used to serve the soup with warmed Langoustines and Courgette mouse,but dont i think you really need those. Enjoy,ideal with a Pimms.
