You have asked the right man. I make a lot of fudge. You need a big pan, and a milk thermometer, as it is so important not to over or under heat.... do not go over 115 degrees!! My favourite is Baileys fudge, I will send the details later, as I am at work now! Is easy to make though.

It is a little bit silly in places, how things pan out, but an ok watch with the other rubbish that is on tv.
