In this case there seems to be a super-spreader. Maybe there is something about this individual’s behaviour that causes the raised infections?

I am certainly no expert but as you say it’s the post that becomes redundant and not the employee. I would have thought that the employer must provide an alternative employment of at least equal status and remuneration as the previous one. There are sources of help out there who are much more knowledgeable than me. ACAS for example.
